Monday was Meat Free Day. Didn’t participate? Well, even if you’re someone who isn’t super into vegetables and the thought of being a Vegan genuinely scares you…for just one day maybe give it a go with our delicious recipes!

 

So what’s the deal with Meat Free Day anyway? In an effort to reduce the carbon foot print associated with animal farming as well as water waste, Meat Free Day was created. The goal was simple: Have a day dedicated to raising awareness on the impact the meat industry has on our environment. In fact, it was calculated (in effort to prove a point on the day) that if 10 million people abstained from meat for this one day, 13 tons of water would be saved. Impressive, huh? That being said, if saving water one day a year is within reach for you…here are a few simple, delicious recipes to take part in making a change (even for a day!):

 

The Recipes

Meatless Bean Burritos:

For this recipe, you’ll need –

+ Whole Wheat Tortillas

+ One can black beans

+1 tsp Cumin Powder

+ 1 tsp Cayenne Pepper Powder 35K HU Organic

+Pinch Salt/Pepper

+ ½ cup Mixed Peppers

+ Avocado, Cubed

+ Salsa

 

To Make:

+ In a pot over medium-high heat, add 1 tsp of EVOO.

+ Add in your sliced peppers, beans (drained), and spices.

+ Let stir on the stove for 10 minutes

+ Place the softened beans in a bowl and stir in cut up avocado.

+ Transfer into the tortilla

+ Enjoy with salsa on the side for dipping!

 

 

Cilantro Stir Fry Hero:

What You’ll Need –

+ Ciabatta Bread

+ 1 tbsp Low Sodium Soy Sauce

+ Stir Fry Vegetables (Trader Joe’s has a pre-packaged one for $4)

+ 1/2 cup Cilantro, cut up finely

+ 1 tsp EVOO ( or Sunflower Seed Oil )

 

How To Make --

This recipe is ultra simple. In a pan over med-high height, add 1 tsp of EVOO. Then, place your washed vegetable stir fry in with the cilantro. Cook until the vegetables are soft. 

After this, add in the soy sauce and let simmer a minute more. 

Let it cool. Place on toasted ciabatta bread and enjoy!
